~Gingerbread biscuits... well, only the dough~

Iiiiiiiiiiiiiiiiiiiik!!!! Hui! Paljon on taas mietteitä tässä päässä. Katsotaan miten käy!

Eeeeeeeeeeeeek!!! I have gone completely nuts now... I have decided to bake gingerbread biscuits. I can't remember having ever baked them myself.. well, at least I have never made a dough for them myself. Moooooom!!!!!!!!!!! I just bought a new cookbook and there happened to be a recipe for Swedish gingerbread biscuits (Donal Skehan's girlfriend is Swedish). Well, I am sure that they are pretty much the same as the Finnish ones, so I thought I'd give them a go. I just made the dough and now it is sitting in the fridge.. waiting for tomorrow. Baking gingerbread biscuits shouldn't be scary, but it is the rolling bit that makes me nervous... will I be able to roll the dough thin enough or will it go too thin? Will it stick to the rolling pin all the time? Will it stick onto the counter top? What if I sprinkle too much flour? Eek! Too many thoughts in my head. Well, we'll see what happens tomorrow.

  1. Hyviä pipareita noin herkullisen näköisestä taikinasta tulee! :)

    1. Kiitos! Toivottavasti niistä tulee ainakin piparinnäköisiä... :)

  2. They will be fine! I doubt you can have too much flour in or on them, and too thick can just be in the oven a bit longer. At least with my recipe (I bake them every year)! :) And I LOVE gingerbread cookies!!! Mmmm...

    1. I was going to say exactly what Jannicke said - so I'll say it again. You can't really go too wrong with gingerbread. If you have too much dough, perhaps cut it into more manageable portions to make the rolling out process easier. Don't worry about sprinkling too much flour (or adding more flour to your bench top as you go). I actually prefer my gingerbread slightly thicker - that way they are a little more gooey on the inside! YUM! Can't wait to see the end product! :) This is the recipe I always use: http://fabulousfoodandalittlefrolicking.blogspot.com.au/2010/12/spicy-swedish-gingerbread.html

    2. I think your recipe is definitely tastier than the one I used.. I think I will put more spices into it next year. By the way, this dough was a bit different kind as it was made in a saucepan!

Pirkko
